If like me, with two little munchkins to sort out in the morning you are a little tight on time, this is the perfect summer breakfast to set you up for the day. Ready in an instant.
The night before, put a few handfuls of oats in a breakfast bowl. I like using Rude Health's Organic breakfast oats. Cover them generously with organic non-sweetened almond milk. Again, Rude Health Almond Milk does the job. Cover and pop in the fridge. In the morning, whenever you are ready, add whatever fruit you have to hand. My favourites are strawberries and blueberries but bananas, chopped apple, chopped peaches or whatever is lurking in your fruit bowl will work perfectly. Add some chopped nuts and seeds. Chopped brazil nuts and almonds as well as a sprinkling of pumpkin seeds are delicious. If you like it sweeter, add a small drizzle of good quality maple syrup. And you're done.
