If you are short on time in the mornings, rushing around getting the kids ready for school or trying to make the early commuter train, it can be easy to lose time for a healthy breakfast making it all too tempting to grab a sugar laden muffin on the way to work. Here are 5 easy breakfasts to either make the night before or that take 2 minutes to make in the morning for you to grab and go.
Overnight soaked oats: Fill a jam jar 1/3 with oats. Add in some extras: grated apple, frozen raspberries, blueberries, Chia seeds or whatever takes your fancy. Top with almond milk, replace the lid and give it a shake. Leave in the fridge over night and its ready to go when you wake up!
Fruit and yoghurt pot: Chop fruit (apples, peaches, pears, oranges etc) and add to a jam jar. Top with organic Greek yoghurt. Sprinkle with mixed chopped nuts and seeds in the morning to save them from going soggy.
Rye and Avocado: In the morning, toast some rye bread, let it cool and top with avocado mashed with lemon juice to prevent it going brown and black pepper.
Toasted Rye, Nut Butter and Apples: Toast some rye bread and top with almond butter and apple slices.
Green Smoothie: Add a ¼ of chopped pineapple, 2 handfuls of spinach, half a banana (pop the other half in the freezer bag in the freezer) and add a splash of water. Blend and add more water to get the desired consistency. You can make this the night before if you are tight on time in the mornings. Just store in a sealed glass flask in the fridge.
